3 Quick and Easy Toast Recipes | 100% Plant Based & VEGAN

In today’s yummy post, I’m sharing 3 of my absolute favorite toast recipes! These recipes are quick, easy, budget-friendly, and best of all, super delicious! The best part about all of these recipes is that they don’t require a lot of ingredients, so you’ll most likely have everything you need lying around. One of my top tips when it comes to cooking is to not let missing ingredients hold you back! If you don’t have something, sub it out for another ingredient – experimentation is key in the kitchen and leads to a lot of yummy new creations so don’t be afraid to swap things around as needed! So, if you’re searching for some new breakfast/lunch faves, these recipes might just be the thing – let’s delve right in!

Chickpea “Chicken Salad” Toast

Garbanzo Toast

1 Can Garbanzo Beans (Chickpeas)
3 Tbs Plant-Based Mayonnaise
1 Tsp Mustard
1/2 Diced Onion
4-5 Picked Jalapeño Peppers or 1/2 Fresh Jalapeño Pepper
1 Slice Bread
2 Tbs Nutritional Yeast (Nooch)
Salt to taste
Pepper to taste
Garlic Powder to taste
Juice of 1 Lemon

Start off by draining and rinsing a can of garbanzo beans and adding them to a bowl. Add in the mayo, mustard, lemon juice, and spices. Then mix it up and mash up the mixture until at least half of the beans are mashed. Add in the diced onions and jalapeños. Toast a slice of bread and top with a thick layer of the mixture. All done!

Mediterranean Tomato-Onion-Cucumber Toast

Mediterranean Toast

1/2 Red Onion Diced
1 Tomato Diced
1/2 Cucumber Diced
1 Slice Bread
Salt to taste
Pepper to taste
Cayenne Powder to taste
Ground Cumin to taste
Juice of 1 Lemon

Add in your diced veggies along with the juice of a lemon and all the spices to a bowl. Give it a good mix. Set aside (alternatively, you can also make this in advance and chill in the fridge for a couple of hours). Toast a peace of bread and spread on a thick layer of hummus on top. Spoon on the veggie mix that you set aside, and voila!

Sweet Banana-Walnut Toast

Banana Walnut Toast

Handful of Chopped Walnuts
1.5 Chopped Dates
1 Banana Cut into Coins
1-2 Tbs Nut Butter
Cinnamon or Pumpkin Pie Spice

Spread a layer of nut butter on a slice of toasted bread. Layer on your banana coins and then top it off with the chopped walnuts and dates. Sprinkle some cinnamon or pumpkin pie spice on top. Enjoy!
